Never , ever, ever, ever in a million years did I expect to be single past 26! I was raised with the hopes of being a staying at home mother, supporting my successful husband, and cultivating a picture perfect home. After years of beating my self up for not finding "happiness" and being ashamed of ALWAYS having to explain WHY I am still single to family and friends, I have decided to be a VOICE for women , we are all experiencing the same thing!

Let me start out by saying, what century is this? Women are no longer traded for land or cows. We dont start having children at 18. To live in this world requries more knowledge and education then ever before.

Not to mention, the quality of MAN that exsisted just a short 50 years ago( a gentleman, chivillress, upstanding, respectful, God Fearing and loyal) is practically an EXTINCT SPECIES. And if you find that man, there is always a chance he is addicted to porn. Thats right, he will choose watching fake , plastic, unrealistic women on a computer screen, over putting in the work to seek out a real women, in the real world, who will show him real love.

Ladies, marriage may not find you in this life, but thats not the end! In many ways, its a blessing to be free of some of the horrid things that comes with a bad marriage or bad marriage partner. For those of you giving away your virtue for free living with a man, SHAME ON YOU, you are part of the problem! No man will ever buy a "house" if the rent is FREE! If he isnt willing to put a ring on it next week or set a date, its TIME TO GIVE HIM THE BOOT!

Men, get your shiz together! Find yourself a role model, a good man, a husband or father, a guy who has what you really want. Stop listening to the LIES the media has sold you and told you! do you really want to live with that tiny, bitchy, hot bodied, unvirtuous , unloyal woman, that at any day could leave you, and could become prego with a child you NEVER wanted to have with her in the first place.

You are meant to be happy! Happiness is coming home to a smart woman, that you know loves you, is commited to you forever, has sacraficed herself to bring children into this world, a woman that supports your interests, and a woman has her own career and talents(but is willing to give them up to stay at home and raise children).

I have written out a list of what my HAPPY single life will look like this year....ITS AMAZING! So many many things to do so many men to date, so many places to go,and so much money to make!

And to my future husband, I love you, I think of you daily, I hope you find me soon, but I refuse to put my life on hold while you aren't here.

"Rachel. Rachel! RACHELLLLLLLLLLLLLLLLLLLLLLL!!!!!" It's like only yesterday I can hear my father screaming my name ,as his favorite Dodge Ram rolls quickly down a hillside, and slams into a telephone pole. His 5 year old daughter just really really wanted to drive the truck though. LOL I am thankful for a father that shown me mercy on that day....for he spared my life. haha

Growing up I can remember a few things which were guaranteed from my dad, here is a small list in no particular order:

~He WILL make you laugh.

~There will only be one woman for him, his wife. To this day I swear my father has never even checked out another womans ankles.

~When life gets hard, he will likely find a spot , any spot, and sleep it off.

~3:30pm means a bowl of Tin Roof Sundae and a 20 min nap in the recliner.

~He loves new toys(see photo above)

~If there is music at your event, he is dancing up a storm!

~And no matter what, you will take care of your parents without question when they need help!

With regards to the last point. A dear friend of mine told me he asked his father 'why he never bought a sports car', to which his father replied," You're my sports car!". Such a simple statement, with such a selfless and sacraficing meaning. My father has always made his family his devotion of time, money, and energy. The tables are turning, I am entering a stage of prosperity in which I am able to offer my father the opportunity to retire, and take care of his needs(i.e. summer home in Alaska and circa 1970's pimp van).

I was just thinking today,"Am I a collector? Do I collect things?" No, I thought.
But alas, I am obsessed with receiving scarfs as gifts. I could literally wear a scarf EVERYDAY(but I dont). I often wonder if I will be that quirky 80 yr old woman who has waist length hair, and always wears a diff. scarf everyday. ;-)
Props to the first person who ever bought me a scarf, its still with me. Black with blingy beads and sparkles all over it. It was used to accent skirts, shirts and....... worn around my hips when I was a Belly Dance Instructor.(meow)

The DREADED "pat- pat" HUG!

Jenny this one is for you.
As many of you know, I am a successful matchmaker, advice giver, and love advisor. A dear friend called me last night for some advice, her concern about the first date was not uncommon. Her question," How do you know the guy is interested in you after the first date?" (please note this advice applies to men also).
I will begin by saying this, never ever ever kiss after the first date(unless by some chance you have been friends for months, and decided a date was needed to seal the deal, there are no other exceptions!) Building up a little desire to see what happens on the second or third date is ideal, and most women are not comfortable kissing after a first date anyhow. Below is a list, in which I will start with #1(the least interest in a second date) thru #9( the most interested in a date).

#1 They open their car door, door in one hand and keys in the other. They quickly say "thanks", and jump in the car. hahaha oh suck
#2 They stand more than 5 ft away from, and without moving their legs forward...extend a hand shake and a "thank you".
#3 They quickly go in for the side hug(not face to face), releasing as quick and say "Thanks again, see ya around." Ouch!
#4 The church hug. (Getting warmer but no cigar!) Both people extend one arm wrapping lightly atop one shoulder, their butt or mid section is at least 2ft distance away from each other.
#5 They quickly go for a two arm hug, however, in under 2 seconds they are patting your back. Like a coach does to his boyz after the game! Ewh, a definite sign they enjoyed the night, but dont want to see you again.
#6 A two arm hug with a decent hold embrace, 3 seconds or more, and they release with no pat-pat. Good stuff, they are thinking about asking you out again.
#7 A two arm hug/ linger longer around 4-5 seconds. Yep, they will call.
#8 A two arm hug/linger longer, plus a quick gaze as you pull out of hug. Fantastic, they were more than into you, and are likely gonna talk a bit longer and go in for a second hug. Yes, they likely want more than just 1 more date.
#9 All of #8 plus they wont let you leave until they have confirmed the next time you are available! This one makes me smile every time! Undoubtly, there is chemistry and interest there!

First off, before you even judge me, please know this.. I am not an activist, not a peta freak, not a tree hugger, nor am I gonna stop cooking my amazing meat meals for friends and family. However, you should know, I have chosen to challenge myself to 90 days on a "High Raw Vegan Diet". Today is day 7, I was at 75% raw vegan ALL week! In addition, I have 100% removed white flour, white sugar and soda from my diet.

I canNOT believe I have left my fans out of my travels and advenures for over 6 months. My apologies, I will REPENT. So there I was Friday night, craving a new food experience in Oklahoma. Contrary to popular belief Oklahoma has some fun and fantastic eating establishments you likely wouldnt find anywhere else! Since I am currently single(boo), I called up my companion foodie....BIG JON! Not only does this guy know how to eat, he has excellent taste buds. Tonights food adventure landed us at The Royal Bavaria Brewery in Moore, OK(aka B.F.E in farming country). We were greeted by women in costume, it gave you a fun old country feel right away. A live band played, which may have been ambiant if they were playing polka, tuba, or even a little cowbell. Rather they were singing Rod Stewart. Hey you can never deny a little Rod! Jon indulged in the JagerBrisket in white cream sauce with sauteed potatoes. It was perfectly tender, but I would recommend subing out the white sauce for the house mushroom sauce. I ordered the Jagershnitzel Spatzle, malleted veal, deep fried, covered in mushroom gravy, atop homemade spatzle noodles, and I could NOT pass up an order of Brussel Sprouts! My meal was divine, a gift from the Bavarian Gods(which I believe are trolls?).

Look at the size of that Beer Boot!! "It's freaking huuuugge! Its got its own weather system!"

BTW, the place was crawling with my FAV kinda men, The Bear in a Man Suit(see pic below)!! Defined: A Bear in a Man Suit, is VERY bearded, over 5'11, thick slightly husky build..you know a proper amount of muscle but a slighty soft gut (like you could see him throwing a tree on his back and walking it across town), and nice strong arms to wrap around you on a cold night....aahhhh yes yes.

History of my Blankey!

Last night I was thinking how jacked up , torn and tattered my big purple comforter is that lays on my bed. Then it came to me, OMGosh, I have a "Blankey"!! It really is my "comforter", there is some serious history with this thing.

So here it is, history of my Blankey:

2000- parents tired of me using old quilts, was given to me as Christmas Gift

2000- Didn't have sleeping bag used for camping out

2000- traveled to my new home LA with me, especially when I was homeless sleeping in my car.

2001- Moved back to Omaha, used for bedding and on occasional picnics

2003- Slept in a tent all summer as a camp counselor in Park City, UT

2004- Took it camping to Canada with me

2005- Had a home but no bed, so I slept on it( on the floor of my SLC ,UT bedroom)

2006- Moved back to Omaha, had no bed but did have a couch...and my Blankey :)

2007- Bought an expensive new Comforter. IT SUCKS! So I go back to Blankey!

2008- Blankey gets ripped during a move to my new home

2009- Blankey accompanies me overseas to England and Prague

2010- Near its death, Blankey is clean and stain free, but is shredding to pieces ,with loss of cotton bits.

Essentially, that Blankey speaks volumes about my life in the last decade too. hahaha

But he's not on the list!

All the singles ladies(and single guys) this break down is for you.

Question: Are you prone to making list of EXACTLY what you are looking for in a future spouse? Literal must haves, as in ,"if they aint got it, they dont qualify!". ? Guess what, I am definitely one of those!! Last week the man I man currently dating and I had a huge wall between us, it was a weird unseen energy that was preventing us from growth, or a possible relationship. #1 Reason I never never allow a guy to make it past "dating " me.....he didnt match my list! Pathetic I know, but I am a saboteur, and its just how I roll.

Now, I asked my current beau why he was so closed off all the sudden, and wouldnt you like to know his reason? I didnt make his LIST!!!! hahahahaha I love it! I did something bold and asked what specifically, why didnt I make "the cut"! The reasons were as pathetic as mine. #1 I'm not blonde #2 Im not a serious swimmer #3 While I am in the choir, I am not the female vocalist he envisioned by his side. Now in all fairness, here is why he didnt make my LIST: #1 under 6ft #2 doesnt have brown eyes #3 Not a serious entrepreneur #4 He is an athlete( in the past athletes I dated were D-bags).

So what was the end result? The feeling of being able to breathe, to laugh at each others ridiculous "standards", and ability to look at each other and say" Let us trash our list, and give each other a chance".

I propose you use your "lists" as more of a game of go-fish. Like, " I will get rid of my height standard, and trade you for your hair color standard. GO!" or " I am willing to let go of my eye color standard, and fish for a man with a killer smile. GO!"

BREAK DOWN YOUR LIST, AND.........GO FISH !

Mexi Egg Roll Madness Recipe

This recipe is da bomb yo!

1 chicken breast, cooked and finely chopped
1/4 cup taco seasoning
1/2 cup water
1 1/2 cups shredded pepper Jack cheese
1/2 cup diced roasted red pepper( i use canned mezzattis)
1/2 cup fresh chopped cilantro
1/2 cup corn
1 scallion, chopped
1/2 cup black beans
1 egg
2 tablespoons water
Egg roll wrappers
Canola oil, for frying

Cilantro Sauce:

1/2 cup finely chopped Cilantro(from food processor)

1 cup Sour cream

Dash of salt to taste

Directions

Heat the cooked chicken, seasoning and water on medium heat until the liquid thickens and gets absorbed into the chicken. Set aside.

Combine the cheese, red peppers and cilantro in a blender until finely chopped. Place in a mixing bowl and stir in corn, scallions, beans, and chicken mixture. Combine well and set aside.

Whisk together the egg and water and set aside. Place wonton or egg roll wrappers on a flat surface and brush the outer edges with egg wash mixture. If you're using wonton wrappers, attach 2 together with egg wash mixture to make a longer rectangle. Place 2 heaping tablespoons of Mex mixture onto wrapper and spread into a log shape. Fold over ends of wrapper approximately 1/2-inch to cover ends of log shaped mixture. After ends are turned in, roll up and seal.

Deep-fry the Mini Mex Rolls in canola oil heated to 375 degrees F until they float. Remove and drain, and allow to cool for several minutes before serving. Serve with cool Cilantro Dip! Enjoy!

Grinders Kansas City visit

A visit to a midwest Diners, Drive-ins, and Dives spot was more than impressive. Located in the heart of the Kansas City Art District, this place screams individuality and style!

We loved that each dining table had a superb piece of the artist work encased in glass. I enjoyed having our chef bring his work to the table, what a great concept, meet the artist who made your food. Every nook of that cafe had some eye catching decor that truly brought you into this artist element.

Lastly, I had the best F^&%in Fried Goat Cheese Salad ever, rocked my socks...RIGHT OFF.

Enjoy the photos I took from my phone. Now jump in your car and go see the peeps at Grinders .

BONUS: The owner/artist was sitting at the table with patrons as we left the restaurant. He was Legit!

Grandpa once told me, that when you were a little girl, you told him," when I grow up I want to be the boss." Now here you are, 50 years later the boss of not one, but three companies. Additionally, I find it ironic you often talked about being a treasure hunter someday, and now you search for antique"treasures", and trade them in for loot(on ebay) on a weekly basis.

Grandma Mills New Hampshire Strawberry Pie

The Memory:

Grandma and Grandpa Mills(Rachel's, Mother's, Parents) lived over a two decades of their life in Jaffery, NH. They lived in a gorgeous forested area just outside the city, in Sara circle, second house on the right to be exact. In the back yard, was thick pine trees, large boulders, and even pre-civil war slab stone property walls. Just down the road was Coll's farm, a farm market specializing in fresh berries, apples, and REAL Maple Syrup. Every summer Grandma Mills would take the Grand kids to the farm early in the morning just after sunrise. Picking several pints of strawberries, we then headed home to have Grandma prepare her special Strawberry Pie.

1 c Sugar
3 tbsp Cornstarch
1 can 7-Up
Red food coloring
1 pt Fresh strawberries
1 Marie Callendar's Pre-Made Pie Crust
Extra Thick Spray Whippedcream

In a medium sized sauce pan combine sugar, cornstarch, and 7-UP until creamy. Cook over a medium to a medium high heat until the mixture becomes thick. When this mixture becomes thick, cool to room temperature, and add a couple of drops of red food coloring.

Bake pie crust according to directions.

Wash, and cut strawberries into quarters, or smaller depending on how large they are. Sprinkle a teaspoon or two of sugar on the strawberries, and place them into the shell. Pour the cooled 7-Up mixture over the strawberries. Allow this to set for a few minutes. Spray with plenty of Whipped Cream.

Southern Comfort w/o the Alcohol

Last weekend a friend convinced me to go try out for the Biggest loser 10, and it required a road trip to Oklahoma City.

The bad news first:

#1 We arrived in a Blizzard

#2 We werent fat or ugly enough to get on the biggest loser.

Now the Good news:

We arrived ealry, and low and behold Heavenly Father threw us a joyful curve ball while

standing in line, two hot headed, hottie pottie southern bells(originally from Paris, TX).

The four of us were an instant riot, laughing, exchanging fat stories, and make up tips, talking about our fav foods. Instant friends!

Because it was was a horrific blizzard with more to come, the lovely Ashley (above in the pink) offered us lunch and use of internet at her home while we looked for a hotel. I didnt know how her husband would like her bringing us home, but she said" Oh no ya'll ,I bring home strangers all the time!" With an accent so adorable you just wanted to squeeze her!!

Once we arrived, we were given a warm blanket, and an overly eager welcome by her dang cute dog Harley(see pic).

Now, a little about Gina," It's pronounced Gin-uh ok?", said by the woman herself. This girl is just beaming with happiness and light, and a little spit fire to boot. I listened as her and ashley went back and forth about colors(personality color test) To quote Gina," Ashley, you are a total Gold, your personality is like a cold shower, first it shocks you, then it becomes invigorating!!". Hahaha Hilarious. And that girl had a a sparkler on her finger that even Alaska couldnt rival with ice!! Shoot dang.

Now a little about Ashely,"I was a state champion Pig wrestler!", she proclaimed upon first meeting her. Why Holly and I love her:

Woke us up from a nap with PIZZA AND DIET COKE..need I say more

MIRACLE MUFFINS TO THE RESCUE!

Fighting Crime in your colon!(j/k) haha

So my business partner created this awesome recipe, sure to get your digestive system on track. It totally fills you up, and gets the job done. I feel cleaned out, and no longer bloated after having this muffin for breakfast 3 days in a row. Wooo nelly! It gott er done!

Recipe:

5 tsp baking soda

2 cps boiling water

1/2 cp butter

1/2 cp applesauce

1 quart buttermilk

5 cps wheat flour

1 cp honey

1 tsp salt

4 cps All bran cereal buds

2 cps bran flakes

2 cps craisens

Zest of one orange

cooking spray

Preheat Oven to 375 degrees.

Add baking soda to boiling water

Allow to cool, set aside

Cream together, butter , applesauce, and honey

Add four eggs one at a time

Stir in Milk, Flour, Salt

Add water mixture, blending well

Separately, mix together remaining ingredients

Drop into greased muffin tins, about 2/3 full

Bake for 20 min

(Remaining batter may be kept in airtight container, in fridge up to seven weeks)

*Warning do not create a large or jumbo muffin, your colon will be subject to serious 24 hour cleaning***

So I had my wisdom teeth ripped, all of which were impacted, and all of which have caused me to switch my diet by FORCE! I believe in free agency in all things, but when it comes to oral suregery.....YOU LOSE YOUR CHOICE.
Anyway, since going to a low fat dairy diet, with only non soda water, and no late night eating....I am down 8.3 lbs and, considerably moody.
Conclusion, its for the better. Soda will kill you (or give you cellulite) in the long run, so it was time to say good bye.

Ry Ry, how many times do i have to tell you.....NO WISHY WASHY HOT MORMON GIRLS! We in the culdusac agreed upon only 'temple marriages' and 'voting spousal approvals'. I am sorry, but according to section 32, article 13, paragraph 3 of the 'culdusac rules and regulations' it states the following :

Best GF French Toast

3 tablespoons butter

6 slices GF Bread

5 eggs

1 cups Heavy Cream

2 cups milk

1/2 cup brown sugar(or ½ cp brown rice syrup)

1 teaspoon orange zest

1 teaspoon vanilla extract

1 teaspoon freshly grated nutmeg

1/2 cup pine nuts

4 red apples, cored and sliced

2 tablespoons juice of orange

Instruction
Grease a 9- x 13-inch baking dish with 1 tablespoon of the butter. Arrange bread in dish in a single layer; set aside. Beat eggs in a large bowl, then whisk in cream, milk, sugar, zest, vanilla and nutmeg. Sprinkle pine nuts over bread, then pour egg mixture over the top. Using the back of a large spoon, press the bread slices down firmly to make sure that each is well covered with the egg mixture. Cover with plastic wrap and refrigerate for 2 hours, or preferably overnight.

Preheat oven to 350ºF. Meanwhile, remove baking dish from refrigerator and allow contents to come to room temperature. Remove plastic wrap and bake until golden brown and custard is firm, 45 to 55 minutes.

Meanwhile, arrange apples on a parchment paper-lined baking sheet, overlapping them slightly; set aside. Melt remaining 2 tablespoons butter, then remove from the heat and stir in orange juice; brush apples with butter mixture. During the last 15 to 20 minutes of baking time for the french toast, arrange apples in the oven and bake until tender. (They should be ready at the same time as the french toast.) To serve, cut french toast into pieces and transfer to plates. Top with apples and drizzle with honey, if you like.

GF Pancake Recipe

Gluten Free Pancakes
1 1/2 red mills GF All Purpose baking flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tsp cinnamon
1 tbsp sugar
1 1/4 cups milk
1 egg
3 tbsp melted butter

DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

First up:
Parm Butternut Squash w/ Quinoa Pasta

1 medium butternut Squash

1 cp diced onion

3 gloves minced Garlic

1/2 tsp red chili flakes

3 tablespoons olive oil

1 tbsp lemon juice

2 tps salt

12 oz bag of BioNature Quinoa Penne

1/2 cp minced parsley

1/2 cup grated parmesan

salt and fresh ground pepper to taste

Preheat oven to 375*. Peel the the butternut squash(use veggie peeler). Using a Heavy Knife, cut the squash in half length wise. Scoop away seeds. Dice squash into 1 in cubes( makes 4 cps). Place cubes in large mixing bowl, and add onion, garlic , red chili flakes, olive oil lemon juice,and salt. Toss ingredients and mix well.

Place the mixture in a large roasting pan, roast for 45 min or until golden brown. Bring large pot of Salted water to Boil, cook the pasta until Al dente. Drain pasta , place in large mixing bowl. Mix with squash mixture. Then toss with parsely,parm and salt&pepper.

Enjoy warm!( this recipe is a quick grab from the fridge, and will hold covered about 4 days)

~Bloke went back to England, went crazy, and now unengaged
~Car slowly dying
~Found 2 part time jobs to pay bills
~Began to train for triathlon
~After 1 month quit training for triathlon
~Lost 16 lbs
~ Found the inspiration to go back to College
~Decided to eat healthier , and stop delaying the inevitable...BECOMING A TROPHY WIFE!
~Found a third job, and left the 3rd job to focus on work for my Heavenly Father.
~Being blessed an idea, and a business partner.
